Yule log recipe

Could somebody please share their recipe? Last year I made Sally’s baking addiction recipe complete with gorgeous bark and meringue mushrooms. Despite loving almost all her other recipes this one was bland and not that springy light cake feel. Has anybody ever made one with a cake from a box? Sometimes I feel all the effort from scratch recipes does not yield the best results in my cakes.

Yuck on cake from the box (sorry). I made this one a few years in a row and it was delicious. Be careful on the decorating! The first year, I didn't do such a good job and it looked kind of like a big poop. Still tasted good but the whole family got a giggle out of it.

The cake part of a yule log is a genoise cake, which is VERY different from a boxed cake. The mouthfeel and structure are just very different. A boxed cake will crack and crumble if you try to roll it into a log. Maybe you would like a regular decorated layer cake better?

If you have access to the ATK recipes (I don’t; I got mine from a hand me down magazine), I made their Yule log last year (two years ago? Time still feels fluid) and it was very good. I think it was caramel espresso or something. I didn’t like that frosting and was supposed to be off coffee when I made it so I went with a plain frosting but the cake was good.

I use Sally’s Swiss roll recipe (making sure to use a combination of dark and Dutch process cocoa in the cake). It is more simple than her Yule log recipe, but my tween kids love it. We decorate with sugared cranberries.

I’ve made them from Cooks Illustrated magazine from the early 2000s (stopped baking so much after having kids) and it was “normal” flavors. Turned out well and I used to get complements when I’d bring them to office parties.
