Anyone want to take on this menu challenge?

What would you serve with this group of people for Christmas dinner? 1 Vegetarian, 1 Pescatarian, 4 Kosher, 3 people with no restrictions

Big vegetarian lasagna or manicotti or stuffed shells made with kosher ingredients + big plain-fish green salad + antipasto platter with marinated veggies, cheeses, etc... + garlic bread and fresh plain bread.

I promise I'm not high, bu I have not idea why I wrote plain-fish green salad. Lol. Green salad.

Stuffed pumpkin with wild rice, mushrooms and cranberries. Festive and dramatic presentation. Sides- shredded kale salad with roasted shallot vinaigrette, parker house rolls and roasted asparagus.

Vegetarians ruin it for everyone.

I would make whatever the heck I want plus some roasted vegetables for the non-meat eaters.

How fancy do you want to be? I'd probably do some kind of grilled fish as the main and have a hearty vegetarian option (e.g. grilled portabella or jackfruit). Serve with salad, roasted veggies, wild rice, and rolls.

If it's less fancy, I find that two batches of the NYT chicken shawarma (one chicken, one tofu or paneer) with a bunch of grilled veggies on the tray as well, garlic-lemon yogurt sauce, and wraps is great. Serve with a salad.

A big smoked salmon seems to be an easy solution here, with fancy crackers. Rice. Roasted root vegetables, a turnip stew (turnips take on the taste of the broth, it's delicious), stuffed mushrooms...

Ha, I loved this whole idea when I read it - was picturing lemon/evoo roasted salmon on top of a salad.

How much do the non-veggie folks care about meat?

Roast potatoes, roasted brussels sprouts dressed with some kind of nut for protein, maybe some mushrooms. Roast beef, vegetarian yorkshire pudding, vegetarian gravy.

Protein-heavy appetizer - maybe a cheese and fish spread (cheese for the vegetarians, fish for the kosher/pescatarian folks).

How are you supposed to cook kosher if you don't have a kosher kitchen and kosher dishes/utensils/etc?
