Sweater weather recipes - stews and more

OK folks, sweater weather is upon us.

What are your best of all time recipes for cold weather - stews, etc.?

I've had (and loved) Alison Roman's "the stew" so we'll get that one out of the way.

What else?

Tips or tricks for an amazing stew? Sometimes my braises come out bitter.

Chicken noodle soup and gumbo from Gimme Some Oven.

Couscous stuffed squash

Slice squash in half (any kind), rub with olive oil and sea salt, roast upside down for 15 minutes

Shred Brussel sprouts, roast alongside squash

Sauté onion, garlic in a little butter, add couscous. Brown for a few minutes.

Add vegetable broth, and cook until tender.

When the squash is done, mix the Brussel sprouts in with couscous, add two tablespoons of cream cheese, and dried cranberries. Spoon into squash, top with cheese and broil until cheese is melted.

Sounds yummy -- but did you really put in 1/2 tsp cinnamon? I find even a dash overwhelms most savory dishes...
