I agree it's kind of heavy. I like it about once every 3-5 years. I come from a part Italian family and we didn't have it often.

I love lasagne, but I can't fathom enjoying a greasy lasagne. Perhaps you've had it with meat? That's gross.

I make an excellent veg lasagna. I much prefer it to a meat one. But the kids, love the meat lasagna..

I've made several different variations. A few times, I've subbed eggplant or zucchini for the pasta, alfredo or pesto for marinara, seafood for the meat. I always use ricotta, sometimes I've used cheddar or swiss instead of mozzarella, but if I use mozzarella, it's the soft fresh slice-it-up ball variety.

You have to customize it to your tastes. I use more noodles, with less sauce and meat in between. I also only use a small amount of ricotta, blended with other cheeses. This keeps it from becoming a sloppy, saucy mess.
