I am in a cooking rut! Anyone care to share their menu for the week?

Clay pot chicken and rice (NYT Cooking)

- Rotisserie chicken from store, baby spinach tossed with bowties/peas/vinaigrette, roasted asparagus
- Cheese ravioli with tomato basil sauce, some sort of Greek-ish salad
- Chicken and veggie stir fry with rice
- Out to dinner with friends (hooray!)
- Either bean/sausage soup with cornbread and salad or those fried pieces of cod from Traders with mac-n-cheese and broccoli

Breakfast: Chia pudding made w/ chia, almond milk, vanilla, honey, dried cherries, and walnuts. Or Starbucks egg bites on the way to work. Or cream of wheat with honey or maple syrup.

Dinner
stuffed shells / halibut baked in foil with olive oil, garlic, lemon zest and capers, served with homemade tartar sauce / chicken enchiladas (the amazing Skinnytaste recipe) / Ben's Chili Bowl chili (they have it at my Giant) with sour cream, cheddar, onions, served with cornbread (Jiffy) / Hungarian mushroom soup (Moosewood recipe)

Lunch
Leftover shells / leftover soup / Sweetgreen by work

Make your own sushi roll (tofu and vegetables)

Risotto with roasted asparagus, chicken optional

Chickpea paprikash

Lasagna soup

Instant pot macaroni and cheese with roasted carrots

It’s my birthday week so I’m making all my favorites.

Monday- pulled pork on buns with coleslaw snap peas and carrots and grapes
Tuesday- seasoned chicken thighs on the grille with kale salad mix and strawberries
Wednesday- andouille chicken sausage pasta with asparagus, zucchini, peppers, broccoli, and carrots
Thursday- burgers with sweet potato fries and veggies/fruit
Friday- nachos with leftover chicken or burger meat or pulled pork- whatever meat is left- or eat out (really craving sushi) with leftover veggies and fruits
Saturday- DHs birthday he gets to choose food all day

We overdid it on fresh fruit and veggies this week so adding them to dinner

Sunday was homemade meatball subs
Yesterday had grilled chicken — just pounded boneless/skinless chicken breasts marinated in TJ Soyaki marinade for about an hour; also made rice with a lime’s worth of juice and some chives mixed in (also asparagus)
Tonight was a family favorite pork chops with stewed tomatoes and rice
Tomorrow is breakfast for dinner: pumpkin pancakes with strawberries, bananas, and blackberries
Thursday is out to dinner
Friday is homemade pizza (I’m that crazy “you should be making your own pizza” poster)

Monday we got Potbelly on the way home from a soccer game. We don’t usually eat out during the week and DD and her friend said it felt like a Friday and was awesome so that made me happy
Tonight fettuccine in Kirkland brand pesto with cooked carrots and broccoli.
Tomorrow we’re having baked salmon in pesto ( we all like pesto) with a microwaved baked potato with frozen peas/corn/carrots
Thursday chick pea tikki masala with Trader Joe’s rice.
Friday black bean and cheese quesadillas. With guacamole and tomatoes.

Balsamic marinated chicken is my 10 year old’s favorite and we had that on Monday:

Chicken breast cut into cubes , salt and pepper
1/4 cup olive oil
1/3 cup balsamic vinegar
Few shakes of Italian seasoning
2 massive tablespoons of garlic
1 tbsp Dijon or brown mustard

You can grill these or just sautee them in a pan with the marinade .

We also had grilled salmon (cover in Dijon and some sort of seafood seasoning blend) with shaved Brussels sprouts topped with lemon zest and some grated creamy black pepper toscano cheese from Trader Joe’s . Last night I made Pinch of Yum chicken meatballs (very simple).

Mon - farfalle with veggie tomato sauce and side broccoli

Tue - Tacos. Filling was 2 parts venison to 1 part black beans cooked together with onion and taco spices. I assume this is healthier than beef(?)

Wed - eat out

Thu - trying a tofu saag. Recipe looks easy but I spent like $260 on groceries because of all the spices. Next time I’ll go to Asian or Indian market instead of $17.99 a jar at Whole Foods.

Fri - probably leftovers
