Savory oatmeal ideas

Someone on the life hacks thread mentioned savory oatmeal. That sounded great! Please, give me your best ideas for making delicious savory oatmeal.

I make steel cut oats like kasha - stirring a beaten egg into the dry grains and cooking them a bit before adding boiling water. I then add things like bits of cheese, Chinese sausage, scallions… whatever strongly flavored stuff I have available. Leftovers get mixed with yet another beaten egg and cooked as oatcakes in a greased frying pan.

I like oatmeal with sautéed mushrooms and a little butter.

Leeks and chicken stock!

Also Gruyère (I cut pear into it but no need).

DH likes sundried tomatoes and Parmesan in his.

Haven’t tried mushrooms, good idea!

I've never tried it but a friend take about doing Cheddar and chives or green onions. I think I would like barley this way but I can't get my brain around savory creamy oatmeal. I guess it shouldn't be that different than risotto, maybe?

Mine are simple but I just do steel cut oats, butter, salt, and sunflower seeds and/or nuts.

I use oat bran for a smoother consistency.

So does the sundried tomatoes! I can't find those anywhere. I prefer the dry ones and not the ones in oil.

Cheddar and apple is fantastic. Trader Joe’s Unexpected Cheddar goes great with oatmeal.

Like a PP, I enjoy cheddar and soy sauce. Cheddar alone is too rich for me, you need a sharp note to balance the dairy and carbs. Scallions are good too, like congee.

Chopped nuts and olives are great, the saltiness pairs well.
