Chaia Tacos Introduces the Enchilada Family Pack

Our family is always interested in new ideas for tasty, healthy, and easy-to-prepare meals. Therefore, I was excited to learn that Chaia Tacos ( https://www.chaiatacos.com/) has introduced the Enchilada Family Pack -- 12 fully-prepared enchiladas ready to reheat in an aluminum pan. This week we were able to try a tray split between black bean and braised mushroom enchiladas.
Chaia Tacos is a woman/mom-owned local small business serving up plant-forward tacos, enchiladas, quesadillas, tostadas, and a few sides. There are locations in Georgetown, Chinatown, and Bethesda. The restaurant is 100% vegetarian and most items can be made vegan. All products are completely nut-free and, with the exception of beer, gluten-free.
Chaia has limited indoor seating, focusing on take-out and delivery with online orders available through the website. In contrast to the rest of the menu which is made-to-order to be eaten immediately, the Enchilada Family Pack requires reheating. It can be picked up or delivered ahead of time and then popped in the oven for 40-50 minutes before eating. It comes in an aluminum pan so preparation couldn't be easier.
The Enchilada Family Pack can be refrigerated for up to three days before reheating. You can also freeze the pack though you probably want to wrap it in plastic wrap or aluminum foil in order to avoid freezer burn.
Younger me would have viewed vegetarian enchiladas (or vegetarian anything really) fairly skeptically. Most of my life I've been a committed carnivore. However, in the interest of losing weight and due to a slowly-developing social conscience regarding eating meat, I've significantly reduced my meat intake over the past few years. Therefore, additional vegetarian options are welcome.
Enchiladas are offered in two varieties: braised mushroom with pepperjack, roasted tomato salsa, and cilantro; and black bean with pepperjack, salsa verde, and pea greens. Both had fans in our family with my own preference being the black bean. They weren't as spicy as I would have liked (something that I believe can be remedied per request), but I found them quite tasty nevertheless. Other family members enjoyed their taste buds not being overwhelmed with spiciness and were pleased with them as they were. The tray fed our family of four with leftovers.
