Why would someone lie about that? Maybe I will just tell her that I ordered a car seat myself because I need to make sure it will fit into my car? I can ask her to reimburse me later. I think she's just really busy with the start of a new job and being a single mom.

Please don't do that. As a parent it would be a huge boundary overstep if a new nanny presumed to order a car seat without asking. There is such a huge range of prices and functionality that I would want a say in which car seat my child rides around in.
