We have two cameras - one in the kids room and one in a place where the majority of common areas converge. We never told. They can be seen. They aren't hidden. We feel no guilt. It's been over 3 years.
You have had the same nanny for three years and still do not trust her. You have some serious trust problems. If I were a Nanny and found out that you had cameras, hidden or not, and didn't tell me, I would quit. For OP, it is illegal to record voices. I hope she finds the camera and quits because who wants to work for someone as sneaky and dishonorable as you.
Ours do not record voice. We do not have "serious trust issues." We have a disabled child who cannot speak for herself, and have another child as well. Neither are great at answering "How was your day? What did you do today?" So we check in, and know.
