You are not required to take them with you anywhere and you are not required to pay for off-duty activities.  That said, there are variations on whether or not you actually do which will depend on the relationship you have with your au pair, how much money the activities cost, etc.  The best thing to do is be totally upfront.

Let's say you are going to a water park for the day.  It would be lovely of you to pay for everything.  Alternatively, it would be completely fine if you said "hey au pair, we're going to the water park for the day and we'd love for you to join us if you'd like to.  We'll pay for your food and drink there, but if you'd like to come, we'll ask you to pay for your ticket.  It costs $35 to get into the park.  Let me know if you'd like to come.  If not, you'll have the day off."  And then she gets to decide.  [/quote]
