Can someone explain to me how this works?

Say I am scheduled to work Monday - Friday 7:00 to 5:00pm does that mean my employers should pay me $500 every week even weeks they are on vacation?

How is this different from vacation and holiday pay?

Yes, they should pay you whether they
use you or not.

As a nanny days come up where your employer will not need you. It may be vacation, grandparents, or a random day they want to spend with their kid. Guaranteed hours mean you get payed for the times when they don't need you but you are available. Vacation time is a different negotiation.
