How common is it to take things from employers?

Assuming this is not a troll post, my guess is your nanny is a klepto. A klepto can otherwise be a lovely person and trustworthy with your child, while a common thief, as a deceptive person, would not be. In any case, some things are black and white unacceptable and I would fire her as soon as I had confirmation that she was stealing.

For the sake of argument, please assume that I am 90% sure that the nanny is taking the items, and the other 10% is the possibility that they were mysteriously lost. But I am someone who is very careful with personal possessions and never lost things like jewelry before this nanny started.

No, NOT common. Theft is a slipperly slope, where the thief escalates her antics until caught or let go. Right now she may even think you don't have the guts to confront her.

Would immediately ask her for them back and for it not to happen again.

Then I would fire her. No trust if you have a thief as a nanny in your house. Is she a liar too? Double whammy firing then.
