While I totally understand why your feelings would be so hurt OP, I think the fact that they gave you a card signed by the children should be enough.

After all, your relationship is primarily based on them, right?

This is not a random person, this is someone who has worked for the family and been there for the child.
A little handwritten note of appreciation isn't asking much. Not when other nannies expect large cash bonuses and huge gifts. This isn't the case here.

But there was clearly no intent to slight her; they clearly thought this was the right thing to do, just as you do when you give a gift to your child's teachers and sign it from the child. Everyone knows it's really from the parents ...

I can understand hurt feelings. You spend a lot of time with these kids and parents. It doesn't sound like it's a big ask, just wanting a quick written note. Not like expensive jewellery, huge cash bonuses are being expected is it?
Nannying isn't any old job, it's a lot more personal.

Right? I am guessing there was a huge cash bonus in the card signed by the kids. It is from the parents.

Is this a serious complaint? Nannies wonder why they aren't seen as professionals...

+1

Would that this were my biggest issue with my job or life.

If it was this alone I would be a little hurt. But if it were the case that it was this incident along with generally feeling unappreciated then I would be even more hurt. So may be more to it.
