Pay for live-in nanny while we are on holiday

Of course, we pay our live in when we go out of town. But, we also ask her to do a few things usually, like back up laundry, walk our dog, cleaning projects that are harder to do during the regular time unless she is taking her vacation during that time.

Which of those are things that she normally does? If she volunteers to do extra things during the hours you don't need her, that's fine. If you ask her to do things that aren't in the contract, that's different.
