Even parents with sick gives deserve a break. Hard to believe, I know. OP if you don't want the extra hours, be an adult and say no. Stop complaining and grow up.

I would be disappointed and let the parents know in the future. Something along the lines of... I'm happy to stay and care for XXX this evening if getting out to dinner is really important. Just so you know, I think this might be a night where he would prefer mommy and daddy snuggles. XXX is feeling pretty rotten.

Pretty unwise, unless you're looking for another job. Ever met or heard of a boss who took well to being overtly judged and criticized by an employee?

And not only this but you'd think they also would prioritize keeping the nanny healthy and try to relive her as soon as possible to lessen her exposure. What's more important? Keeping the nanny overtime with a feverish baby for dinner, or at least aiding making sure she can be healthy so they can go to work? Ridiculous

Where is the judgment and criticism? She is giving her professional advice and a professional childcare provider. Guess experience and background only matters on paper and shouldn't be applied once hired?
