OP here and thanks for all the great suggestions!

I make a lot of things and freeze them for my charges.

For example I'll make a Lasagne and freeze several portions for future meals. It makes it easier for both me and MB/DB to always have things in the freezer to pull out on busy days.

Crustless Mini Quiches freeze really well. I make these frequently.

I use a lot of Weelicious recipes. She usually gives instructions on how to freeze whatever it is you are preparing. In the last week I've made and froze some:

Broccoli/Cheddar Patties
Cheesy Turkey Meatballs
Apple/Banana Muffins
Veggie Burgers
Sweet Potato Black Bean Enchiladas
Easy Chicken Nuggets

Take a look at the site and I bet you can find some things your charge will like.

Good Luck!

OP, your idea of mini quiches is a great one. I make something similar in muffin tins. I put in any filling I have unhand, usually cheese, broccoli, sometimes bacon, and scrambled some eggs with half and half and then bake them. They freeze well and would be a good plan for your charge.

Do you use any sort of crust on the bottom?

PP here. No, i don't use a crust. I do spray with cooking spray or lightly butter the muffin tins so they don't stick.

I usually put the veg in first, then the eggs, and put the cheese on the top.

Hope this helps.
