I'm a MB, and I'd be REALLY angry if my nanny picked up lice from a babysitting gig and gave them to my child, so I'm with the PPs in thinking the sitter was right to say better safe than sorry. You probably think it is fine, but 9 times out of 10, so did the mom of the child who gave your kids the lice (both times).
Don't fire her. Even if you feel justified in doing so, think of it in this (admittedly self-centered) way - she goes to your church. The last thing you want is for her to tell other people that you fired her for refusing to come babysit after she found out your kids had lice. |

I bet you'd be pretty upset if the tables were turned and her full time charges spread lice which ended up in your home.
She found out yesterday and told you. Now, if YOU were professional you would have told her prior instead of trying to hide it because you need a sitter. Kinda selfish on your part. |
