A simple caprese sandwich with basil leaves, mozarella and slices of tomato on cheesy olive bread?
No smoked salmon.
It is delicious, but stinky. Too stinky for a teen to bring to school.

You can also make chilli, cook till you reduce most of the liquid, add cooked corn, shaved carrots, salad greens, cheese, lettuce etc and make a sandwich in a sandwich maker like below.
With a sandwich maker - you can put in any protein (like egg salad) between two slices of bread and make a beautifully sealed and toasted sandwich.

Cook a beef roast and slice it thin to make a roast beef sandwich
How do you cook a ham from scratch ? I’d appreciate any recipes anyone has tried.
TIA
Ham is cured pork. If they cure it using natural ingredients they can write "uncured" or "no added nitrites" but it's still cured with ingredients that convert to nitrites in the meat.
I make my own chicken, turkey, and tofu lunch meat. But when someone wants ham or bacon sandwiches, I buy the "uncured" (but actually cured) versions at the store, and just limit it so it's not that often.
You could also try making lunch meat from a pork loin. Here is a recipe for that:

I haven't tried it, but it looks promising. Maybe I will!
