Sun— picked up burgers
Mom—Grilled mahi tacos with black beans, mango and veggie toppings
tues—spaghetti and meatballs
Wed—egg, mozzarella and tomato sandwiches with side of steamed broccoli in lemon butter sauce
Tomorrow might be bean and cheese quesadillas with guac and tomatos or maybe pasta carbonara with peas on side
Friday butternut squash ravioli
Saturday —- kids are out so I maybe will get a salad or just eat roasted veggies or something.

Thurs: Homemade pizza

Sunday I had a seasoning kit thing from McCormick I think, a chicken/peppers/onions thing over rice

Monday was chicken legs in the crock pot (actually pretty good and I'm not a leg fan) with roasted potatoes and broccoli

Tuesday another crockpot night with boneless ribs, baked potatoes and corn

Tonight I had bought spinach-stuffed manacotti at Aldi, with marinara sauce, salad and garlic bread

Thursday--"fried" chicken thighs, potato salad, biscuits

Friday--pork tenderloin, roasted veggies (brussel sprouts, onion, etc)

Saturday--date night!!

Homemade veggie “steaks” with mashed potatoes, gravy and roasted asparagus. A lot of work but my kids ate it without complaint and I made double and froze half.

Tomato soup with mozzarella

Make your own tofu Spring rolls and peanut sauce

Asparagus frittata with melon

Frozen pizza

Pasta with Parmesan cheese

No link but a PP shared roughly the following:

Put cut up kielbasa, bag of a baby carrots and cut up white cabbage in a pot with 1/2 cup water. Simmer for 20-30 minutes.

That's my recipe!! So proud.

If you like onions, add those. Or maybe potatoes. Or maybe not, it's good every which way.

Tomorrow: seasoned chicken thighs in the instapot, vegetable soup

Friday: taco night (neighbor sharing ground beef from the half cow he bought)

Saturday: beef stew
