You can freeze it for latter if you only want to use a little now. portion it between a few ziplocks so you don't have the same problem latter.

Marinate chicken would be my first choice. If I felt ambitious, though, I’d make a buttermilk pie.

Marinate chicken

You said you’re not a baker, but if you have a food processor or a high quality blender, you can make biscuits. Chuck them in the freezer and bake as needed.

I'd use it to marinate a chicken- check out Samin Nosrat's buttermilk chicken.

I use buttermilk for my daily breakfast smoothie (1/2 cup buttermilk, splash of water, 1/2 frozen banana, 1/2 a pealed orange, 1/4 a pealed lemon, some berries, and a big handful of mixed greens blended together). Could also make buttermilk pancakes or waffles. Great for marinating chicken for frying (could oven fry).

A quart is enough for two batches of waffles or pancakes. It keeps well so you could make some today and then next weekend.

Biscuits are actually really easy to make.
