[/quote] I made this, but did it like this: -Sautee finely diced Vidalia onion until brown. Added 1Tbsp Sherry and cooked off. -Ran a container of mushrooms, a head of broccoli, fresh garlic and a few carrots through the food processor until fine -Threw veggies in pan and sautéed until all water was released. At the end, I added generous amounts of Italian seasoning that comes salted -Cooled veggie mixture -Added veggie mixture to the pancake batter -Cooked pancakes on the skillet -Topped with unsweetened plain yogurt. I see how these could be modified to just about anything...adding cheese, ham, or making them spicy. Absolutely delicious! My family LOVED this.[/quote]
