1. Finely chop the onion, garlic, and vegetables.

2. Heat 2 tablespoons of the olive oil in a large skillet over medium-low heat. Add the onion and garlic and cook, stirring, for 1 minute. Add the other vegetables, ½ teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally, until everything is tender, 5 to 8 minutes.

3. While the vegetables are cooking, make the pancake batter according to the package directions.

4. Add the cooked vegetables and the Parmesan to the batter and mix to combine.

5. Cook the pancakes as you normally would (use olive oil instead of butter to help kick it up to dinner status). Top with the sour cream and serve.



I made this, but did it like this:

-Sautee finely diced Vidalia onion until brown. Added 1Tbsp Sherry and cooked off.
-Ran a container of mushrooms, a head of broccoli, fresh garlic and a few carrots through the food processor until fine
-Threw veggies in pan and sautéed until all water was released. At the end, I added generous amounts of Italian seasoning that comes salted
-Cooled veggie mixture
-Added veggie mixture to the pancake batter
-Cooked pancakes on the skillet
-Topped with unsweetened plain yogurt.

I see how these could be modified to just about anything...adding cheese, ham, or making them spicy. Absolutely delicious!
My family LOVED this.

Made these the other day

Tenderloin:
2 pork tenderloins (about 2 1/2 pounds altogether)
4 slices bacon (and bacon fat created from cooking the bacon)
8 ounces mushrooms, sliced
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
1/2 teaspoon sea salt (divided)
1/2 teaspoon ground pepper ( divided)
3 cloves garlic, chopped
4 cups fresh spinach

Lemon Parsley Oil:
4 tablespoon olive oil
2 teaspoon lemon zest
3 tablespoon fresh parsley
1/4 teaspoon sea salt
Dash ground black pepper

Another crazy easy black bean soup...can of black beans, drained, half jar of a good salsa, cumin to taste, and veg or chicken broth. Add to a pot, blend w immersion blender, and heat. This is my "the refrigerator is completely empty" lunch.

17:23 poster again. I also just tried the Gweneth Paltrow recipe for italian style fish fingers and they were seriously delicious. I changed some of the ingredients bc we do not have gluten or dairy sensitivities

1 cup panko breadcrumbs
1 1/2 teaspoon oregano
1 tsp garlic powder
1 tsp salt
1 cup reduced fat milk
4 flounder or sole filets cut into fingers
olive oil spray
lemons

preheat oven to 450. line baking sheet with parchment paper
whisk bread crumbs, oregano, garlic and salt.

coat fish with milk then dredge in bread crumbs

spray with olive oil spray on both sides

bake for 8 minutes and then broil for 1 or 2 minutes (if you don't have broiler just bake for additional 2 minutes)

drizzle with lemon juice

This was seriously delicious and both my kids ate it!

I do a lot with frozen shrimp, already peeled and deveined to save time. This is one of my go-tos, although I can't guarantee everyone will like it! Fairly healthy, too:

Mexican Casserole/Pie in Cast Iron pan:

Oil the large frying pan; put a layer of corn or flour tortillas (maybe need to cut to fit);

then a layer of salsa and refriend beans (microwave 60 seconds and stir to blend first);

Then shredded cheddar;

Then browned ground beef and onions (can do this ahead of time and put in fridge);

Repeat layers.

End up with lots of cheddar on top; can put diced tomatoes and green onions on top.

Bake at 350 for 15 minutes.

Easiest go-to salad

Arugula
Squeeze a lemon on top
Drizzle some good EV olive oil
Maldon + pepper
Fresh shaved parmigiano

Grilled chicken, garbanzo beans, grilled whitefish all go nicely on top of this salad.



15-min spaghetti

Spaghetti
Cherry tomatoes chopped up
Basil
Parmigiano (like 1/4 c.)
Olive oil + S & P

Cook pasta 2 minutes under the lower minute range for al dente. Drain and reserve 3 tbsp. of pasta liquid. Return to pot, add tomatoes, a drizzle of olive oil, parm, salt and pepper, and mix rapidly with heat on high until an almost "creamy" a la minute sauce is created. Garnish with basil. This pasta can be made with leftover chicken, shrimp, veggies, basically anything.


Super lazy sweet potato

Nuke a sweet potato (normally bake but sometimes I don't have time)
Add black beans, salsa, cilantro, maybe a pinch of shredded cheddar, chipotle pepper powder, salt and pepper. The arugula salad can be chopped up and mixed into the sweet potato if I'm not feeling like Mexican.


And yes, meals like these are our speed meals that everyone gobbles up. Mostly I like roasting Brussels sprouts or making vegetarian soups--those recipes take longer and though they are easy, they require more attention throughout the day.

Kids and adults both love this

adults and kids love this, generally takes less than 30 minutes to put together and is fairly healthy

Indian spiced ground turkey with peas

-saute small chopped onion, two garlic cloves, and teaspoon of peeled minced ginger in some olive oil
-add ground dark turkey and cook for a few minutes (cooks quickly)
-add 1/2 teaspoon of garam masala, 1/4 teaspoon of turmeric, salt and pepper to taste
-add 6-7 oz of peas and mix together
-serve over rice

I often make lasagna from the Ronzoni no-boil package. I mostly follow what the box says. But instead of a pound of ground beef, I use half-pound of ground turkey. I also use a little more tomato sauce than the box says. This is my go-to pot luck dish. I never come home with left-overs.

what's not healthy about this? My kids would love this. You can shred the chicken and toss it into tacos. Easy and healthy.

Stop judging, a-holes. Recipes like this may not be the healthiest but they are still way healthier than most takeout or fast food options. People are doing the best they can for their families in the time that they have.

Serve w cilantro lime rice (I like the microwave brown rice from trader joes and then adding lime and chopped cilantro). I'll sometimes add pinto or black beans, and hot sauce.
