[u]15-min spaghetti[/u] Spaghetti Cherry tomatoes chopped up Basil Parmigiano (like 1/4 c.) Olive oil + S & P Cook pasta 2 minutes under the lower minute range for al dente. Drain and reserve 3 tbsp. of pasta liquid. Return to pot, add tomatoes, a drizzle of olive oil, parm, salt and pepper, and mix rapidly with heat on high until an almost "creamy" a la minute sauce is created. Garnish with basil. This pasta can be made with leftover chicken, shrimp, veggies, basically anything. [u]Super lazy sweet potato[/u] Nuke a sweet potato (normally bake but sometimes I don't have time) Add black beans, salsa, cilantro, maybe a pinch of shredded cheddar, chipotle pepper powder, salt and pepper. The arugula salad can be chopped up and mixed into the sweet potato if I'm not feeling like Mexican. And yes, meals like these are our speed meals that everyone gobbles up. Mostly I like roasting Brussels sprouts or making vegetarian soups--those recipes take longer and though they are easy, they require more attention throughout the day. [/quote]
