We are flying for Thanksgiving for the first time to be with family we usually aren’t with. I’m vegetarian. Usually where we go most things are veg friendly except the turkey, and I make a substantial additional main dish to be shared. The house we are going to will be very meat heavy (sausage in the stuffing, bacon in the veggies…) I’m generally happy to cook but we are flying in late Wednesday and will have limited use of a kitchen on Thursday morning. What can I make quickly in limited space??
Bring can of black beans, a can of sweet corn, ask them to get you a sweet red pepper and an avocado that you can cut up. Mix it up with a little olive oil and balsamic vinegar. If want spice , bring a few red pepper flakes. That should tide you over with some of the other sides that are meat free.
