[/quote] You have to have a really strong hand mixer to deal with cookie dough. I just have a hand mixer. What I do is kind of half melt the butter before adding it to the dough. That helps make the cookie dough easier to mix. Once I have it all mixed up, I put the whole bowl of cookie dough in the frig for an hour or two. That stiffens the dough up before it is time to bake with it. You have to watch your timing once they are in the oven, since the dough is chilled a little and therefore might take a little longer for the cookies to bake.
