Some people (elderly, pregnant, young kids) are more susceptible to food poisoning. So just because a 40-year mom and her 15-year-old kid can eat such a cake without getting sick doesn't mean this is a good idea. [/quote] No, you’re wrong. It’s just that it’s more dangerous for a very old or pregnant person or baby to be sick. I mean obviously the OP and her kid not getting sick doesn’t mean anything about anything. The rules are just to minimize risk in a commercial setting. It’s not like something bad happens to your food after two hours. The rules are about minimizing the time food spends at a temperature where harmful bacteria can multiply. [/quote]
