Is OP the same type of person who will throw away a bottle of mustard from the fridge if they lose power for 7 hours?

If you throw it out, you're a little nuts.

As a general rule, it's not safe to consume perishable food items that have been left out at room temperature for an extended period, especially overnight. Cream cheese frosting, being dairy-based, is particularly susceptible to bacterial growth when left at room temperature.

Bacteria such as Staphylococcus aureus and Salmonella can grow rapidly on food items like cream cheese frosting, leading to foodborne illness if consumed. Additionally, the moisture in carrot cake can create an environment conducive to bacterial growth.

To ensure food safety and prevent the risk of food poisoning, it's best to refrigerate perishable items like carrot cake with cream cheese frosting promptly. If the cake has been left out overnight, it's advisable to discard it to avoid potential health risks.

Chatgpt is planning to stalk your trashcan and get some of your cake.

Southern Living says the cream cheese frosted cakes should be refrigerated after 2 hours unless the frosting is the shelf-stable type: https://www.southernliving.com/does-cream-cheese-frosting-need-to-be-refrigerated-8385177#:~:text=While%20the%20addition%20of%20butter,be%20put%20in%20the%20fridge.

I agree. I'm late to this thread but would not leave a cake with homemade cream cheese frosting unrefrigerated.

Also immune systems vary. Some people (elderly, pregnant, young kids) are more susceptible to food poisoning. So just because a 40-year mom and her 15-year-old kid can eat such a cake without getting sick doesn't mean this is a good idea.

No, you’re wrong. It’s just that it’s more dangerous for a very old or pregnant person or baby to be sick.

I mean obviously the OP and her kid not getting sick doesn’t mean anything about anything. The rules are just to minimize risk in a commercial setting. It’s not like something bad happens to your food after two hours. The rules are about minimizing the time food spends at a temperature where harmful bacteria can multiply.

Do not waste that cake. I hate carrot cake, but you will incur a pox if you waste cake.

Yeah fine, this is the food safety standard. Absolutely you should adhere to this if you are selling the food or serving it to anyone very old or pregnant. But they don’t test cake, this is just the rule for all refrigerated foods. Mixed will all the sugar, the actual risk to the op is very very low.

This forum is bizarrely paranoid about food safety. The stuff yall throw out amazes me …

A lot of members would be horrified at us. We leave our butter out in a butter dish all week. The horror!

This doesn’t make any sense. Both are fine. I leave all cakes out on counter for days. Never an issue.

You know what else are good preservatives? The preservatives they put in cream cheese.

I should dump it, right? It was so so good and my kids will be so sad re: leftovers this week. But you know, don’t want to poison anyone either.

What say you, hive mind?

Enjoy the cake!
