I think people put the shade down because they are oh so sophisticated and bored with flying that they don't need to see the amazing view during take off or landing that the poor peasants who don't get to travel often would really like to see.
I don't fly often and still get thrilled by doing it (and being able to afford it) but I sometimes lower the window shade because I get hot sitting in the sun, or because I have to work or am watching a movie and want it to be a little darker. But even as someone who only flies once every few years, I don't get why you care if you can see sky or clouds for the 90% of the flight when that will be all that's out there? I do enjoy looking out the window for takeoff and landing and that's why when I fly, I try to book the window (or get an early boarding time for Southwest so I can nap a window seat), so I can see that. But I understand that if I am not in the window, I probably won't get to see that part and while it's disappointing, that's just how it is.
