American Girl might actually be a great choice! It's not about the dolls but real life and crafts. My daughter had a subscription to it until she was 13 and loved getting it in the mail. She was definitely not less mature than girls her age.  I just got an old issue that we had laying around. The topics in the magazine are:

9 creative bedroom projects - style your space
Advice about secrets - to tell or not to tell
Fun personality quizzes
A poll on hair
Dying Easter eggs
An article about a family with quintuplets
A fiction story about two girls who dream up having a cooking show - will it spoil their friendship

The only thing about the dolls in it are an ad on the inside front and back covers.  It's really a nice magazine for girls! I think it's perfect for a 5th-6th grader. YMMV
