I have a mom who's just like this and who pushes every button she can find. Someone told me once that in the face of a borderline personality like my mom's (and it sounds like your mom's) the best you can do is treat it like a hurricane: batten down the hatches, get out of the way, and once it's over, just move on as best you can.
