Waitressing 101- you start on lunches because they are the crap money. You need to work you way up to dinners/nights because that is where the money is. Plus everyone wants to work Frid/Sat night because that is the best money.
+1 My sister is a waitress and I hear all the time about the woes of scheduling. There have been lunch shifts that she feels barely covered the gas to get there. Certain people get the dinner shifts and no one knows how you qualify to be the top performers that get the dinner shifts regularly. As for time off etc, you have to put requests in a month before and it is exactly that, a request. If you get scheduled for that time anyway, it's on you to get someone to cover your shift. Yes, you can make good money waitressing but the scheduling isn't always flexible, you have to work your way up to the more lucrative time slots, and you often need experience and/or helps to know someone to get hired. I thought some of the other suggestions were better, like catering staff, night time health aide or night nanny.
