My certification will allow me to work within the next year and I can be semi self employed. I'm going to keep applying for jobs and will tell restaurants I'm willing to be kitchen help if that leads me to something else. I've always been a good worker so I know I can prove myself. I'm going to be honest. With what you are saying (no actual work experience except for nannying and face it, most people will just think babysitting, and no college degree), you don't sound like a good catch in the work environment. I would start out as a cashier, perhaps at target or Walmart at night. Those places also look for people to shock shelves at night. If money isn't really an issue, and you are just looking for added income on the side, then I would babysit. I know you said you don't want to drag your kids and someone else's to the store but are you seriously going shopping or running errands every single day? Provide no babysitting on Mondays and make Monday your day to do all errands. Then you just watch the kids during Tuesday through Thursday and if they are around your kids age, it's practically a play date and you get to relax as they play.
+1. DOD just got their furlough notice today. There are folks with Master's degrees looking for crappy-paying part-time jobs. Overnight stocking at Target or Walmart is your likeliest bet.

Please continue to apply to the restaurants- double shift on Saturday and Sunday can bring in $400 to $600.Not all of them are about seniority.

Another possibility if you have a minivan is to offer afterschool pickup and after care. Suburban parents are frequently looking for such.options. you and your kids could go to a school, pickup someone else's kid, take them to your home until their WOH parents can get them after work. You can advertise in a local or neighborhood listserv, hang a sign at the local supermarket or even hang signs in the area near the closest school.

I think it's your schedule that's causing problems. As others have said, most people want Thurs-Sat night shifts. If a manager hires you, he or she is going to really tick off the rest of his staff, who have to work the crappy lunch and Mon/Tues shifts. I waited tables for a long time and would never walk into a new restaurant expecting to be hired with that availability.

You only applied for 3 jobs! You might need to apply for dozens before you get a job offer!
I think working as a field merchandiser would be a great fit for you. Most have flexible hours, but just want you to be consistent. I do this for a greeting card company. Check out the NARMS website.
If you really want to waitress, maybe apply at a family-oriented place where your childcare skills might matter. Especially if the restaurant has bday parties and such.

My sister is a waitress and I hear all the time about the woes of scheduling. There have been lunch shifts that she feels barely covered the gas to get there. Certain people get the dinner shifts and no one knows how you qualify to be the top performers that get the dinner shifts regularly. As for time off etc, you have to put requests in a month before and it is exactly that, a request. If you get scheduled for that time anyway, it's on you to get someone to cover your shift.
Yes, you can make good money waitressing but the scheduling isn't always flexible, you have to work your way up to the more lucrative time slots, and you often need experience and/or helps to know someone to get hired. I thought some of the other suggestions were better, like catering staff, night time health aide or night nanny.

Not sure if it really is the right fit for you, but you may want to look into catering waitstaff. This would be working weddings, corporate events, and such. Check local event planners, caterers, hotels.

I would look at hospitals (clerical, transport, etc). 24 hours a day and the money is not bad. You can also apply online to every hospital right from the comfort of your home.
