[/quote] I didn’t do this because I wanted to specific the thickness of ribeye cuts that I wanted. I expect that at a butcher I should get as close to what I ask for as possible (vs buying at the meat counter at whole foods, for example). Whole Foods had lovely ribeyes and crab cakes! [/quote]
