Grocery store checkout clerk, when my belt was full of stuffing breadcubes and potatoes and cranberries and butter and celery and onions: wished me a happy Thanksgiving, and I returned it.

A youth activity that normally meets on Friday, but we canceled this week. Last Friday, everyone said happy T-day as we left.

I would not think to say it to a colleague that I will likely talk to again this week. If the people involved in this OP have a deadline right after Thanksgiving, they are probably heads down on that, expecting more interaction over the next couple of days, and not rant thinking about the holiday yet.
