I didn’t write Happy Thanksgiving in an email as I didn’t know if the person would find it offensive. It felt odd. I did say enjoy the short week, but that also felt lame.

+1 I've heard it from people, but I don't say it unless it's the day of or possibly the day before.

I wished my cashiers at Tj Maxx and HomeGoods and Marshalls a happy Thanksgiving and that this was goodbye until December 1.

For me, it's just a day not a season. I only wish "Happy Thanksgiving" on the actual day or the day before. So too early for me.

I celebrate it. I don’t feel the need to say or be told “Happy Thanksgiving” by strangers. I will say it to people I know. But only if I see them that day or maybe the day before.

I've said or heard it (or, usually, both) when the person is someone that I won't see again until after the holiday, and especially if we normally would see each other but the holiday is the reason we won't.
For example:
I have a normal 1:1 tag-up with a colleague on Wednesdays. I'm taking Weds off to travel for the holiday, and Tues was booked, so we had our tag-up today. There was less to discuss b/c our last tag-up was just a few days ago, so conversation naturally went to holiday plans (why I had to reschedule). We signed off with Happy Thanksgiving.
Grocery store checkout clerk, when my belt was full of stuffing breadcubes and potatoes and cranberries and butter and celery and onions: wished me a happy Thanksgiving, and I returned it.
A youth activity that normally meets on Friday, but we canceled this week. Last Friday, everyone said happy T-day as we left.
I would not think to say it to a colleague that I will likely talk to again this week. If the people involved in this OP have a deadline right after Thanksgiving, they are probably heads down on that, expecting more interaction over the next couple of days, and not rant thinking about the holiday yet.
P.S. deadlines right after a holiday really suck!!

I personally only wish others a Merry Christmas + Happy New Year but usually refrain from wishing a Happy Thanksgiving 🍁.
