If you want it to taste like restaurant fried rice, add more fat and salt. A lot more.


It isn't this, it's the cooking technique. Restaurants use a super hot flat top or super hot large wok, and the rice gets a lot of contact with a hot surface so it gets a better taste and texture.

Also, making fried rice with rice that was cooked the day before, or cooked earlier that day and allowed to sit helps too. Rice that is too fresh will be too sticky or have the wrong texture.

It's about getting lots of very hot surface area to fry the rice on so all the rice has contact with the frying surface--hibachi places use a flat top, and chinese restaurants use a large wok. When you make it at home, the best thing you can do is fry the rice in smallish batches so it all gets contact with your frying pan.

Tempura, spring rolls, pad Thai, fried rice… these are all dishes where the ingredients, the cooking methods, and most of the seasoning will be familiar.

Send out a feeler. Ask her what proteins or veggies they like or hate, and if they prefer saucy or dry.
A veggie/egg/protein fried rice goes over easy with people who like fried food.

Be happy that you get to share a cultural dish with them. I'm guessing their skeptical abd probably stubborn to try something "foreign" abd unfamiliar.

Go easy on the spice (mild is best) and on the smell (easy on the garlic, by its own nature its overwhelming ). Present it on a nice platter. But cheap chopsticks, too, to keep it lighthearted (makes for a good laugh and conversation).

DP. I don't think the husband would have mentioned this to the OP if it hadn't already been agreed upon. It could be something for OP to do because there is nothing much else for them to do together.
