We use yellow, red, and orange bell peppers, with red onion. IME, a cut tomato is a mess and broccoli is somewhat blah. Get the red from red bell peppers. [/quote] My mom used to make this in the 80s/90s. I believe she mixed plain cream cheese with a packet of ranch mix and (possibly?) some sour cream to make it easier to spread. It was then topped with as many diced veggies as it could hold, pressed into the cream cheese mixture. She typically used carrots, red onion, bell peppers, and definitely broccoli! If you just use the florets chopped finely they blend into the rest of the mixture quite nicely.[/quote]
