This time of year, I’m eating soup 4-5 times a week for lunch. Some days it’s a bowl of it with saltines. Other days, I’m pairing a cup of it with a small sandwich. This week was homemade potato soup, and some split pea soup from a neighbor. In the summer, I basically eat two types of soup all summer long-cold cucumber-yogurt soup, and gazpacho. Both soups are made with veggies I grow in the backyard. Most days, I’m having cups of those with a BLT, also using backyard tomatoes. Mmmm my mouth is already watering at the thought…
I aspire to be you.
Hah-come join me in my soup cult!
Oh, I’m deeply entrenched in the soup cult already, but thank you for the invitation! I have it virtually every day for lunch. I’ve brought one of my kids into the fold as well—potato leek soup made with nothing but potatoes, leeks, salt and water and then puréed is one of his favorite meals. It’s the growing of the vegetable part that seems so dreamy. So far I’ve just managed herbs and random squash that sows itself from the compost pile. A vegetable garden is a huge part of my fantasy of retired life.
