It's also about the texture - fresh farm eggs (or Gerry's, I haven't tried Vital Farms but will look for them!) have a larger, thicker yolk. It makes for a smoother, less chalky center in hard-boiled eggs, and richer creamier scrambled eggs. [/quote]
