When you are done, rest the whole plate in the fridge for a couple of hours.[/quote] I spent a LOT of time working with chocolate and want to add: Instead of regular chocolate I would buy the chocolate coating disks that you can get at Michaels. They have more cocoa butter in them so the chocolate won't crystalize and look funny. I wouldn't add butter because that will keep the chocolate from getting as hard. Chocolate truffles are extremely easy and delicious. Just look up a basic recipe and mix the warmed cream/butter with the chocolate and a Tbs of a nice liquor. Chill and then scoop and roll into balls (cover your hands in cocoa powder). They are REALLY yummy and REALLY easy but people are always impressed.[/quote]
