Then I open up boxes of salad as demand indicates. People can dress and top their salad with tomatoes and croutons as they see fit. This is pretty easy to clean up and save any food that hasn't been eaten. If there's too much salad, you can send extra sealed boxes home with others, but they won't be goopy with dressing people might not want. Bagged croutons keep well. Unsliced cherry tomatoes are also pretty easy to handle without wasting.[/quote]
