Same- maybe our kids are on the same team

I would do a veggie tray and a fruit tray.

You can buy them premade.

Or you can make them...

Veggie: baby carrots, whole small bell peppers, grape tomatoes, de-stringed and end-trimmed snap peas, celery sticks, cucumber rounds (I prefer the tiny ones). Dip in the middle (ranch, onion, whatevert).

Fruit: cleaned and trimmed strawberries, grapes, blueberries, pineapple, kiwi is what I'd do based on what's in stores right now.

We are caesar salad people, dressing on the side, chicken on the side. That way people can add however much dressing and chicken they want (or don't want).

That would apply to any produce even if you wash it at home. Washing does not remove all pathogens.

That's why we don't eat raw. Especially prepared by others.

NP. You don’t eat raw lettuce? Raw anything?

This cranberry kale mix is available at other store chains and I think it's yummy.

What I sometimes do for potlucks is to buy the bigger sizes of spring mix (pre-washed) in a clear plastic clamshell. I bring a big salad/serving bowl with a storage lid, a bottle of Newman's lite dressing (Italian or Balsamic Vinaigrette - they taste good and not like diet food), sealed bags of croutons, washed cherry tomatoes, and some disposable bowls to set out the tomatoes.

Then I open up boxes of salad as demand indicates. People can dress and top their salad with tomatoes and croutons as they see fit.

This is pretty easy to clean up and save any food that hasn't been eaten. If there's too much salad, you can send extra sealed boxes home with others, but they won't be goopy with dressing people might not want. Bagged croutons keep well. Unsliced cherry tomatoes are also pretty easy to handle without wasting.

Caesar or make a Greek salad but things are in larger cubes with no lettuce (so big chunks of cucumber, cherry tomatoes, feta and olives). Easier to eat.

The cranberry kale salad kit from Costco is pretty good, if they still sell it.
