If my mom is in a rare good mood she may answer a question and even talk about what she has been up to, especially if it’s a topic she wants to demonstrate she knows a lot about.

She sounds as if she has the mild to moderate paranoia that comes with certain forms of autism. There is also well-known paranoia (that can become much more severe) in untreated biploar disorder and schizophrenia, but you'd have noticed by now if she had either of those two diseases.
