[/quote] There are some that have a "display hold" button you can press to keep the display on that temp while you remove the probe. But most people pull the item out of the oven, set it on the stovetop or counter, close the oven door, and take the temp reading. Your face won't be any closer to read the display than you'll need to be just to handle the pan. If additional time is needed, put the item back in the oven. This helps keep the heat in the oven, not escaping into the kitchen. [/quote]
