I could definitely live with just two of the three but we do use them. (Just gave away a mini processor we rarely used.) The vitamix whips a lot of air into things. It makes a very smooth hummus and babaganoush but sometimes too fluffy for the texture I want. Same with pumpkin soups etc.[/quote]
