We have a vitamix, large processor, and a handheld immersion blender. I use the vitamix least often. I could definitely live with just two of the three but we do use them. (Just gave away a mini processor we rarely used.) The vitamix whips a lot of air into things. It makes a very smooth hummus and babaganoush but sometimes too fluffy for the texture I want. Same with pumpkin soups etc.

I use mine to grate most things (does a block of cheese in less than a minute). I do a sweet potato soup that comes together in 15 minutes with grated sweet potato.

Any kind of puree -- gazpacho, hummus, soups.

Shortcrust pastry dough.

I use it for tabbouleh a few times a month. Much faster than chopping four bunches of parsley by hand.

Mine lives in the cabinet and I use it probably 2x some years and 20x other years.

The good thing is they last forever and don’t mind sitting unused for long periods. I wouldn’t want to do without it but I definitely wouldn’t keep it on the counter.

If I moved to Manhattan I’d let it go, sure.

I have a larger one (about 5 cups) that is in the pantry and comes out when I need. I have a smaller one (2 cups) that is used regularly and sits on the counter. Chops nuts, basil, parmesan and good for making salad dressing, It doesn't take up much space because it's small.

I tend to only take it out for big cooking times like Thanksgiving. I have a small kitchen so it is in the basement. I have a mini manual chopper I use all the time for veggies and beans and nuts.

About once a year. On the other hand, I use my kitchenaid and blender both at least once a week.
