[/quote] You can make chicken soup from boiling the skin and meat from chickens and not include bones. If you do this, you get a chicken flavored soup that is not bone broth. This chicken soup base is fine to make soups where you want a clear broth as your base, like putting in shredded chicken and vegetables. However, you can also make broth from bones or bones along with meat and skin. When you do this you get more protein and collagen (elements that the broth will get from the bones). It also tends to be less clear and a little more translucent. It is often more flavorful, too. In general stock is made from a combination of bones, meat and skin. Broth is made from meat and skin, sans bones. I think that companies started selling bone broth under than name because too many people did not know the difference between stock and broth, so they changed the name to be more explicit about whether or not it was made with bones or not.[/quote]
