Maybe OP just wants the protein? If you are eating eggs with cheese, you really don't need the added fat from the yolk too[/quote] That "some vitamins" translates into a whole lot of nutrients, including vitamin D. True, if the OP was looking for highest protein/lowest calorie, remove the yolk. But if OP was looking for "healthy" overall, as in the title, removing the yolk would be the opposite of that.
