It’s funny you suggest that because I think removing the yolk from an egg makes it less healthy. That’s where most of the nutrients are. Why would you remove it?
It depends what nutrients you are in need of. The yolk is mostly fat, cholesterol, some vitamins. Maybe OP just wants the protein? If you are eating eggs with cheese, you really don't need the added fat from the yolk too
That "some vitamins" translates into a whole lot of nutrients, including vitamin D. True, if the OP was looking for highest protein/lowest calorie, remove the yolk. But if OP was looking for "healthy" overall, as in the title, removing the yolk would be the opposite of that.
