You could also do a raspberry reduction (definitely strain out the seeds). I think either of those methods would be better than jam in terms of flavor--and you don't want the added sweetness on top of the sugar you're using for the frosting. You could fold raspberry jam into homemade whipped cream if you want a lighter raspberry flavor (again, strain seeds). This would also be good just served as a dollop on the side. I think all the lemon lovers including myself would love to come over for a slice! :D [/quote]
